Saturday, 28 December 2019: Casa Colibri

The last workers left last night just before 9pm.  Debris swept up but sawdust everywhere.
Birthday brunch today at 11am.  First guests in our enclosed/sun room kitchen.  First guest to eat on our new red dishes.

Friday, 27 December 2019: Casa Colibri


Pilates at 9:00 — the only day this week we did this.  Ivan and team came about 10:00 to work on the outlets and lights under the upper cabinets and at noon, Antonio and his team showed up to install the pantry and car cabinets.  I am SO excited.  

Aholi came in the afternoon and it ws hard to calm down for my massage but she is pretty magical.  Tony came by with Bethania so we all had a quick visit before getting back to watching cabinet installation.


Of course, there is always more.  Just like I HAD to move back into the main kitchen just as we were preparing for Thanksgiving dinner, well, today we are preparing for a birthday brunch for tomorrow.  Ten or twelve people will be here at 11 am tomorrow to celebrate Carole’s birthday.  I need to be cooking and prepping but instead I am watching the construction.  And I am thrilled.  I can’t wait to move into my pantry.

Wednesday, 25 December 2019: Carole’s house


Carole professes that this is the last Christmas dinner in her house.  The buyer is storing a tricked out gater in her garage so he is committed.  A new survey must be completed and goodness knows just how long that could take.  Nothing moves quickly with regard to porperty purchasing in Mexico.  She’s really hoping that everything will be completed before she leaves for the summer in April.  She might stay with us... I hope so.  

Justin and I started our day with mimosas and little else.  We were slugs until it was time to go to Carole’s at 4:00pm.  Katherine made it back to Celestun just in time for Christmas dinner.  Robbie, Tim and Janet, and Justin and I rounded out the guest list.  Ham, scalloped potatoes, glazed carrots and green beans with almonds were followed by a traditional trifle.

Monday, 23 December 2019: Merida

It was a big day today.  Some days are slow and lazy.  That was not today.  Ivan and his son went with us into Merida.  They had Christmas shopping to finish but first they went with us to Home Depot and Casa Fernandez.  We bought Ivan a large hammer drill and he will work off the payment over time.  While we gave gifts of cash to all the over workers, we gave Ivan a special bit for the hammer drill.  He seemed quite pleased.  After we bought the lights for under the cabinet, they went on their way to shop.  Justin and I went into Costco and turned right around and left.  There was simply no way we were going to wait in those lines.  




Dentist visits were on tap for both Justin and me.  I only had a cleaning but Justin got crowns to finish out the implants he started last year.  I am so proud of him as he is following through with this plan.  I loathe the dentist and somewhere along in the process I might have just thrown in the towel but he is persevering.  Two of the three are totally complete.  He has to wait until 4 January for the third as a bit more healing is required before they place the crown.  











Last stop for the day was Boston’s for the game... WOW!  The pssed out the gear to the team as soon as the game was over.  "The North is not enough" is the saying for this year after winning the NFC - North division.  One more game against the Lions next week to determine seeding and playoff standing.  Now they are playing for a first week bye and for home field advnatge during the playoffs.  
We celebrated with a decadent chocolate 
dessert after the game!



Sunday, 22 December 2019: Casa Colibri


Lorayne’s birthday. I tried to reach her a week or so ago but as yet, no luck.  I hope she is doing well.  

Another Norte is blowing through today. We had a pretty good storm go through here on Wednesday.  I was a doozy but... it was only wind and rain.  Sandra cancelled Pilates class. 
Evaristo didn’t come and Ivan didn’t come.  Antonio let us know that with the wind he wouldn’t be able to finish the cabinets and that made sense.  None of the other cancellations made sense to me.  I guess I was looking at this through the eyes of a principal.  We’d never have cancelled school for this.  Maybe I lived in Okinawa too long; you just keep going.  Maggie came to clean and that was good.    I closed all the windows in the kitchen.
I love my kitchen!!!




The best news going this morning was that the wind blew down the rest of our garage.  I'd been bugging Justin about knocking it down since it was such an eyesore but it wasn't high enough on his list yet.  Guess God took care of me cause now it is down.  Justin and Abraham knocked out the posts that were remaining and then moved a few of the pavement blocks to make a walkway in another spot.  I wasn't too upset at all!
















Best biscuits ever this morning -- at least according to Justin and me.  Today that's all that matters.  Not too long ago I learned to grate frozen butter.  Today I found that sweet spot between not overworking the dough so that it becomes tough but working it enough so that there are layers of delicious flakiness.  I need to make sure I can repeat this deliciousness.  Then, the next step will be to grate the butter and have it ready in the freezer.  Maybe I'll toss it with a tablespoon of flour.







Jake and Leslie came over on Wednesday evening.  I’d made tamale pie for the workers who didn’t show up so they joined us for dinner.  

On Saturday Jonathan made carachoal.  All the shells that washed up in the norte had critters living inside.  He'd gathered a huge bagful and came over to make ceviche for all of us.  Thankfully we had plenty on onion, limes and a few tomatoes and peppers on hand.















Ivan hung our new light fixture over the coffee table and then we repurposed the terra cotta fixture.  It now hangs in the corner and subtly illuminates the stone.  



















Earlier in the week Abraham found a box turtle.  It was about 2 1/2 inches long.  T\Justin did a bit of research to learn that hey live to be 150 years old.  The don't do well in captivity so relatively little o=is known about them.  He carefully returned the girl to a safe place on our grounds.  Maybe we will see her next time we have lots of rain. 











It is all about impeachment in some conversations and it is all about football in others.  Justin and I are pretty psyched about the Vikings game on Monday night.  We will go to Merida tomorrow as we both have dental appointments and then we will head to Boston’s for perhaps the most important game of the season.

Sunday, 15 December 2019: Casa Carmita in Merida



We went sailing yesterday.  Jeremy ended up with this 18’ catamaran from the ladies who used to own their house and Justin is trying to teach him to sail.  Justin got out twice yesterday and I was able to join him on the second voyage out.  I was all about it.  


Carole had us over for dinner on Saturday evening.  She answered Jeremy’s request for Shepard’s Pie and tiramisu.  Great visit.  Since Carole has sold her house and is only waiting for paperwork, this may be one of the last dinners she host in that house.  She plans to host Christmas dinner so it’s probably not really the last supper.  



Sunday in December found us in Merida so we could watch the Packers defeat the Chicago Bears.  There are so many provisions we need to acquire and errands to run that we can justify spending the night in town plus Justin has a dental appointment tomorrow for the next steps on his bone graft and dental implants.  


We went by our favorite plant store and the car is already filled so I’m not really sure how I’ll pare
 down my grocery list, but we will press on tomorrow.
