Thursday, 17 July 2025: Hartung (on the United website)

Off to the Post office to renew Justin’s passport.  Yes, let’s do this now and not have a repeat of mine expiring.  We paid for processing to be expedited so we can move forward with Global Entry and with visas.  I made my spreadsheet and I am starting to plan.  Four months from today, we will leave Houston to fly to Ho Chi Minh City.  Yes, I finally booked our flights.  We will leave 22 October and fly straight to Merida from Green Bay.  On to south east Asia from 17 November until 17 February.  Back to Celestun until early April and then fly back to Green Bay.  No time in Texas is a bit strange for me but I guess that just means Dellene and I will get to meet somewhere exciting instead!  We got some fabulous hints for Vietnam from Hoa Nguyen so now I’m set to start the research and planning the details.

After passports we went to the farmers market on Military.  We were at the boat last Saturday morning and yesterday Green Bay saw torrential rains.  With fresh tomatoes, we enjoyed Tomato salad with dumplings, a NYT recipe, for dinner.  I followed advice from Komei to finish off the gyoza with a bone broth slurry.  It was fabulous.  We enjoyed tomato cobbler when Christina was here and tomorrow we can have tomato pie.  Then we can have a tomato sandwich and then we can repeat them all…all summer long.

We went to infectious diseases a couple of days ago…global entry … visas… lots of moving parts.
